  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/4 cup kalamata olives, pitted and halved
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Italian seasoning
  • Salt and pepper, to taste



  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, arrange the chicken breasts and top with the diced bell peppers, red onion, cherry tomatoes, and kalamata olives.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Pour the mixture over the chicken and vegetables.
  4. Bake the chicken and vegetables for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. Just before serving, top the chicken and vegetables with the baby spinach.
  6. Serve hot and enjoy
