2 chicken breast fillets, diced
24 cherry tomatoes
6 mushrooms, divided into 4 pieces each
2 minced garlic cloves
1 grated lemon zest
2 tablespoons lemon juice
2 tablespoons olive oil
1 tablespoon chopped thyme leaves

Instructions: You can use a stainless steel skewer set or disposable wooden skewers for this recipe. Skewer 1 piece of chicken, tomato, and then mushroom. Repeat this twice and end with chicken. Place the skewers in a shallow, non-metal plate. Mix the garlic, lemon zest, lemon juice, olive oil, and chopped thyme and pour over the skewers. Marinate for at least 2 hours or overnight in the refrigerator. Grill the skewered chicken and tomatoes on a lightly oiled, hot barbeque grill, turning occasionally until the chicken is cooked and the tomatoes are slightly dry.
