- 1 pack of Happy butterfly pasta
- 4 tomatoes
- 5 pointed peppers
- 200 g olives
- 2-3 cloves garlic
- 1 spoon tomato paste
- 3-4 sprigs parsley
- 1 bowl grated cheddar cheese
- 2 tablespoons olive oil
- Salt, thyme, a pinch of mint

- Boil the pasta according to the recipe on the package. Grate the tomatoes, extract the seeds of the peppers and chop them finely. Remove the seeds of the olives, crush the garlic.
- Roast the peppers in a lean pan and cook, adding the tomatoes. When you’re out of water, add the garlic, tomato paste, salt and spices and stir. Add the olives and remove from the heat. Wash and finely chop the parsley and mix with the cheddar cheese in a separate bowl.
- Strain the pasta and place on a serving plate. Pour the tomato sauce, then the cheese mixture on top and rub the olive oil. Serve hot. Mediterranean sauce pasta recipe
