Materials

  • 2 oversized quinces
  • 1 cup of water
  • 1 cup granulated sugar
  • 1/2 teaspoon cherry juice
  • Juice of 1/2 lemon
  • 1 stick cinnamon
  • 3 cloves

Fabrication

Peel the quinces and cut them in half. Remove the cores.
Place quinces and quince peels in lemon water to prevent it from darkening.
Arrange quinces in a large-bottomed saucepan. Sprinkle an average of 2 tablespoons of granulated sugar on top of each quince.
Then place the lemon juice, quince seeds, quince peels, water and spices in the pan.
Cook over low heat until soft and pink.
Add the cherry juice to the boiling water and cook for a while, closing the lid.
After an average of 1 hour, check the quinces that drain with a fork.
If the quinces are cooked, remove from the heat and wait 10 minutes for their first temperature to pass.
Place the cooked quinces in the serving plate. Drain the remaining water in the pan and rub it over the quinces.
