Mediterranean Meatballs Recipe

  • 100 g Curry Carrots
  • 2 Cans Peeled Tomatoes (800 gr)
  • 7 Tablespoons Olive Oil
  • 200 g Shallots
  • 4 Tooth Garlic
  • Salt, Pepper
  • 80 g Walnuts
  • 80 g Dried Tomatoes
  • 2 Slices of Toasted Bread
  • 1/2 Bunch parsley
  • 1 Small Bunch Basil
  • 4 Anchovy Fillets
  • 500 g Beef Mince
  • 1 Egg
  • 5 Tablespoons Oil

How to Make Mediterranean Meatball Recipe:

Wash, dry and finely chop the celery leaves. Extract carrots and celery and chop in the food robot. Strain the peeled tomatoes, collect the juice in a bowl and chop.

Chop the onions. Roast half the onions, 2 cloves of crushed garlic, carrots, celery and pieces of tomatoes in 4 tablespoons of olive oil. Add the tomato juice, put the powder and pepper and cook over a light heat for 30 minutes.

Finely chop the walnuts, chop the dried tomatoes. Turn the remaining onions, garlic and walnuts in 3 tablespoons olive oil. Chop the toasted bread and crumble in the food robot. Finely chop parsley, basil and anchovies.

Knead the minced meat with eggs, toasted bread, dried tomatoes, walnut mixture, parsley, basil and anchovies, add salt and pepper while kneading.

Prepare 16 meatballs from the minced mixture. Fry in hot oil and over medium heat.
