  • 4 chicken breasts
  • 1 lemon
  • 2 cloves garlic
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 1 cup baby spinach
  • 1/4 cup pitted olives
  • 1/4 cup crumbled feta cheese



  1. Preheat the oven to 400°F (200°C).
  2. Zest the lemon and mince the garlic.
  3. In a small bowl, mix together the lemon zest, minced garlic, oregano, thyme, salt, and pepper.
  4. Place the chicken breasts in a baking dish and rub the spice mixture over the top of each breast.
  5. Drizzle the olive oil over the chicken.
  6. Bake the chicken for 25-30 minutes, or until it is cooked through and the internal temperature reaches 165°F (74°C).
  7. While the chicken is cooking, slice the cherry tomatoes in half and set aside.
  8. When the chicken is done, remove it from the oven and top it with the cherry tomatoes, spinach, olives, and feta cheese.
  9. Return the baking dish to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and the vegetables are warmed through.
  10. Serve the chicken hot, garnished with additional lemon zest if desired.
